Ingredients
  • 1 cup (1-1.25 oz package) Bowery Farming Basil
  • 4 oz Bowery Farming Baby Romaine
  • 5 anchovies, from a jar
  • 2 cloves garlic
  • 1 teaspoon dijon mustard
  • Juice from 1 lemon
  • 1 cup grated parm, divided
  • 1 egg yolk
  • ½ cup olive oil
  • Salt and pepper, to taste
  • Croutons
  • Parmesan flakes
Preparation
  1. In a small food processor, add anchovies, garlic and Bowery Farming Basil. Pulse until a smooth paste forms. Add dijon mustard, lemon juice, ½ cup of the parmesan cheese and the egg yolk. Pulse to combine.
  2. With the food processor running on low, slowly stream in olive oil until the dressing comes together and emulsifies. Season with salt, pepper, more cheese and lemon juice to taste and process once more.
  3. Add dressing to a large bowl then top with Bowery Farming Baby Romaine, croutons and parmesan flakes. Carefully toss until the romaine leaves are evenly coated. Serve immediately.
