Ingredients
- 1 pound boneless, skinless chicken breast
- 1/2 cup greek yogurt
- 2 teaspoons dried oregano
- 2 tablespoons red wine vinegar
- 2 tablespoons dijon mustard
- 1 lemon, juiced and zested
- 4 metal skewers
- Balsamic Salad Kits, for serving
Preparation
- In a bowl, combine yogurt, oregano, vinegar, mustard, and lemon juice and zest. Season with salt and pepper.
- Cut chicken breasts into 1-inch cubes, and add into yogurt mixture. Toss to coat, then cover and refrigerate for 1 hour.
- Remove chicken from fridge and evenly thread onto skewers.
- Heat a grill pan over medium high heat, and spray with olive oil. Once hot, place skewers on pan and cook for 2-3 minutes, or until the underside is browned and releases from the pan easily. Flip 30 degrees and cook for 2-3 minutes more. Flip once more and cook until fully opaque throughout.
- Let the skewers cool slightly, then top your Balsamic Salad Kit with them.
